At Lowlands Festival, Brasserie 2050 barn-shaped zero-waste pop-up by Ouvertreders W (2018 NL) uses rented/recycled steel shelves and plastic gable roof—tables from recycled plastic, herbs/wheat/corn/garlic/onion hanging overhead, grain sacks as ballast. Menu invents leftovers into toast, steak tartare, pesto—modeling food for 10B people by 2050.
